A Little Background
 he Saint Pierre de Serjac Winery located on the calcareous-clay slopes near the community of Puissalicon (Herault) was built on the foundations of a Roman villa. The large number of amphora fragments that have been found here bear witness to a strong wine-making tradition that was already well-established in the early centuries of our era !
The winery has been in the de Chefdebien family for over a century. Paul de Chefdebien, the great-great-grandson of the mansion's builder (an Edwardian Era " folly"), currently runs the property.
Vines and Soil:
The soil is made up of calcareous-clay slopes which are very propitious for red grape varieties (Merlot, Cabernet & Grenache) along with marls encouraging the production of white wines that are silky and round on the palate (Chardonnay & Vermentino). We have committed ourselves to obtaining grape varieties with the same quality.
We have added Merlot and Cabernet to the typical "Midi" (Mediterranean) regional grape varieties (Grenache, Syrah & Carignan) for Red Wines.
We have planted 7 hectares with Chardonnay, 3 with Vermentino and 2 with Small-grained Muscat for White Wine for its intensity and flavor.
The vines receive very close attention with close pruning to enhance the quality of production and leaf removal to ensure better ripening. The old vines are harvested by hand.
We prefer to pull weeds ourselves rather than use weed-killers and protect the land's natural balance by using "green fertilizer".
Wine-making methods:
We have equipped ourselves with a low pressure Bucher pneumatic press to extract the most tannins while preserving the must's organoleptic qualities.
We make the wine using two cold units with very strict temperature monitoring.
Carbonic maceration is used to vinify the Grenache, Carignan and Syrah & obtain very full-bodied and flavorful wines (laurel, blackberry & licorice).
We have employed the services of two well-known enologists, Jean Natoli and Herve Chabert, to help us constantly improve our techniques.
Wines:
Our Grape Variety Wines (Merlot, Cabernet & Chardonnay) mature into Pays d'Oc Regional Wine and our blends mature into Cotes de Thongue Regional Wine.

The wines from the Saint Pierre de Serjac Winery distinguished themselves as early as in the 1899 viticultural exhibition.
Our wines are now currently available in several European countries (Denmark, Belgium & Great Britain) as well as in the United States.
