t all started with a love for the land. The La Clape region used to be a small island in the past and the Romans decided to plant vines there
thereby creating the La Clape vineyard. Monges Winery was at the heart of it even then
A monastery was founded here in 1204 by the Bernardine Cistercians. Abbaye des Monges (Monges Abbey) or Olieux Monastery was built on the western slopes of the low-lying La Clape mountains and became one of the rare female Cistercian abbeys in the Languedoc region. The chapel from this period called Notre-Dame de Grâce (Our Lady of Mercy) or Notre-Dame des Olieux (Our Lady of Olieux) still exists nestled in the center of the winery.
This winery brimming with over 800 yrs of history charmed Marie-Claude and Paul de Chefdebien so much that they decided to live here. They have gradually been making the winery come alive again since 1997. The vineyard has over 30 ha of vines and 65 ha of fields and garrigue.
By taking over this property the Baron de Chefdebien continues to carry on his family's wine-making tradition. The Saint Pierre de Serjac winery located in the Cotes de Thongue appellation (Puissalicon, Herault) has been at the heart of the de Chefdebien family for over four generations.
